What is the Difference Between HACCP and ISO 22000?
Food production companies must have a system that fully and completely operates in all areas such as raw material purchase, production, storage and transportation. The production of the products produced as clean, healthy and high quality depends on the company's implementation of the quality system.
Different systems targeting food safety, such as HACCP or ISO 22000, are used in food production businesses. So what is the difference between HACCP and ISO 22000?
“What is HACCP?” If we ask the question; The Hazard Analysis Critical Control Point was originally developed by NASA to provide perfect food production for astronauts. The purpose of the HACCP system is to identify, control and prevent risks related to hazards in order to ensure safe food production.
HACCP can be applied in different areas, from a small cafe to a large food production business. The main difference between ISO 22000 and HACCP system;
- While HACCP is a food safety management system that businesses will use, ISO 22000 is a food safety management system that includes rules that businesses must meet.
- ISO 22000 enables businesses to develop a food safety management system by external experts.
- Risk analysis should be done within the scope of ISO 22000.
- The HACCP system generally includes preconditions and measures at critical control points. Under ISO 22000, a set of control measures called operational prerequisite programs have been added.
- ISO 22000 requires a monitoring system and planned corrective actions. ISO 22000 requires results to be analyzed and improved after following HACCP plans.
- Continuous improvement should be made with ISO 22000 and the management system should be kept up to date.
